Did you recently attend our de’Vine Wine and Culinary Weekend? If you did then you probably had a taste of the award winning Bourbon Chicken Soup from our Chef’s Soup Challenge. Six of Grand View Lodge’s finest culinary teams competed to create their best soup du jour.
Chef Shawn Lowman prepared this cream-based soup with fresh ingredients and bourbon to add that extra kick of life to the recipe. The use of heavy cream adds a decadent texture to the soup. In addition, sautéing the ingredients together versus boiling them add a great flavor and aroma to the soup.
The soup is garnished with a topping of fresh shaved scallions and chopped tomato for a fresh and earthy twist. After a spoonful taste, you’re going to want more than just one bowl! For recipe, click here!
Whats Cookin’ at Grand View Lodge
Each year, the Grand View Lodge Culinary Team tries to create a little creative competition between the chefs of the resort. At the de’Vine Wine and Culinary weekend this year, each chef was challenged to create their own soup recipe to be tasted and voted on by 200 plus de’vine attendees. This year’s 2016 Soup Challenge winner was Banquet Chef, Shawn Lowman.
Shawn joined the Grand View Lodge Culinary Team back in 2009. Born in Elk River, he formerly worked closer to home at the University Club in St. Paul and the Earl Brown Heritage Center in Brooklyn Center. Since joining the team here, Shawn has experienced some of his most memorable moments being a chef.
“My favorite moment as a chef was definitely cooking for the Food Network’s Simon Majumdar from the TV shows Iron Chef America and Cutthroat Kitchen at de’Vine in 2014,” says Lowman. “It was an honor to cook for Simon who’s known as one of the toughest critics.”
