Chef’s Choice of Appetizers

The evening kicks off with the Chef’s choice of Appetizers which is paired with Roundhouse’s Boom Lake Lager & Angel Seat Amber. Book Lake Lager, named after the original location of Brainerd Brewing Company which was located on Boom Lake, is created using pilsner malt produced in Minnesota, balanced with American Crystal and German Northern Brewer hops. Crisp, light bodied, with a mild malt flavor and aroma.

Second Course

Enjoy pan roast tenderloin of pork with wild rice sweet potato hash, cabbage, balsamic honey glaze paired with 46 North Wild Rice Ale. A perfect dish for this time of year, the pork roast is a show stopper and is browned perfectly, tender, and flavorful. Meanwhile, the 46 North Wild Rice Ale is brewed with certified organic malts and hops, and wild-grown, traditionally harvested wild rice. It is crisp and clear with an earthy finish.

Third Course

Grilled Scottish Salmon features herb bacon crust, sweet corn purée, and Brussel spout petals paired with Manley’s Wee Heavy. This grilled salmon is elevated with the bacon crust adding a rich texture. The sweet corn purée adds a bright, fresh, and yet flavorful addition. Roundhouse’s Manley’s Wee Heavy beer is named after the brewer’s grandfather, Manley Cunningham. He was a railroader all of his adult life. Manley’s Wee Heavy is a strong Scottish Ale. It is full-bodied and malty, with hints of currants and caramel. Rich and dark in color and has a malty aroma.
